Ghee Fried Banana





This is easy but very tasty dish.Every one like this especially kids.

Ingredients:

1 Banana (Ripe one)
1 tea spoon Sugar
1 Table spoon Ghee
1 or 2 Cardamom

How to prepare:

Peel and cut the banana thinly in lengthwise into 3 pieces.

Heat ghee on a fry pan, place banana slice on low - medium heat.When one side became light brown turned it and add 1 tea spoon sugar over the banana and crushed cardamom.keep it for 1 minute. when sugar starts melting remove from fire.

serve hot

Easy Potato Curry

Ingredients:

1 Potatoes
1 Onion
1 Green Chilli
1/4 tsp Turmeric powder
Salt

1/2 tsp Coriander powder
1/4 cup thick Coconut milk

Seasoning:

1 tsp oil
1/4 tsp Mustard / Kaduku
1 Red chilli
Curry leaves

How to prepare:

Peel and cut potatoes and onions into cubes.Add potatoes,onion,green chilli,turmeric powder ,salt and 1 cup water in a pressure cooker. Cook it for 2-3 Whistles.When it is cool,,open the cooker and mash the potatoes little using spoon.Add coriander powder and coconut milk into it.Boil for 1 minutes.
In another pan heat 1 tsp oil,mustard,red chilli and curry leaves.Add this to the curry and keep it closed for 5 minutes to infuse the flavour.

Serve hot with Idiappam.Palappam and pathiri.

Ari Unda (Sweet Rice Balls)

Ingredients:

1 cup Matta rice/ Kuthari
1/2 cup Jaggery /sarkkara grated
1/2 cup Coconut grated
3 Cardamom

How to prepare:

Heat one cheenachatti/ kadai. Dry roast rice in medium low heat,keep stirring until rice starts splitting with sound.When it is cool grind the roasted rice and cardamom to a fine powder using mixer.Keep it in a large bowl.Grind the grated jaggery and coconut , just one crush only for blending all together. Add this mix with powdered rice. mix all well.Make small lemon size balls and smoothen the surface.

Fish curry with coconut milk


Ingredients:

1/2 kg Fish
1 Onion sliced
3 Garlic thinly sliced
2 piece Ginger thinly sliced
2 slitted Green Chilli
Curry leaves

For masala:
1 tsp red chilli powder
1 1/2 tsp Coriander powder
1/4 tsp turmeric powder
1/4 tsp pepper

1/4 cup Raw mango sliced
1 Tomato
2 Pieces Cocum/ Kudampuli
1 1/2 cup Coconut milk with medium consistency
Mustard seeds
1 tsp oil
Salt

How to prepare:

Make fine paste with chilli powder,coriander powder,turmeric and pepper by 2 tsp water.Keep aside

Heat oil in a kadai and splutter mustard seeds. Add onion,green chilli,ginger,garlic and curry leaves.Saute it turns to a light brown colour.Add masala paste.Saute till oil separates.Add sliced mango,Kudam puli ,fish pieces and salt.Pour coconut milk and cook the fish on medium heat.Finally add curry leaves and thinly round tomato pieces.

Vrutharacha Kadala Curry


Ingredients:

1 cup Kadala/ black/white chickpeas
1 Onion sliced
1/4 tsp Turmeric powder
Salt

1 cup Coconut grated
1 tsp Chilli powder
2 tsp Coriander powder
1/4 tsp Fennel seeds / Perumjeerakam

Seasoning:
1 tsp mustard seeds
2 Dry red chilli
Curry leaves
1 tsp Coconut oil

How to prepare:

Soak kadala over night or minimum 8 hours.Cook kadala by adding onion,turmeric powder and salt in a pressure cooker.

Roast coconut and fennel seeds until coconut turns golden brown.Add chilli powder and coriander powder.Stirr well with out burning it.Allow it to cool.Grind well by adding some water to a smooth paste.

Heat a pan add 1 tsp coconut oil and splutter mustard seeds.Put dry chilli and curry leaves.Add coconut paste and cooked Kadala.Mix well and boil five minutes.

Puttu

Ingredients:

 2 cup Rice flour
1 cup grated coconut
1/4 tsp Cumin seeds/ jeera( optional)
Salt
Water

How to prepare:

Mix rice powder and salt.Add water little by little over the flour and mix well using hand till the flour became wet and soft. Take care don't add more water and don't mix hard .Add  1/4 cup grated coconut and crushed cumin seeds/ jeera seeds( if adding.but it will give a nice aroma to the puttu). Mix well.

Boil water in the puttu vessel. Put 1 Tsp coconut into the puttu kutti/puttu maker.Pour flour over the coconut.finally add 1 Tsp coconut on the top.
Steam well till steam comes from the top of the puttu kutti.
Serve hot with banana and sugar or with curry.

Kappa Puzhungiyathu (Boiled Tapioca)

Ingredients:

1Kg Kappa/Tapioca
Salt
Water

How to prepare:

Peel and clean tapioca.Cut into big pieces.Boil plenty of water in a big vessel.Add tapioca into the boiled water and cook it. add salt .When it turns tender drain off water.Serve with easy crushed chilli chutney.

Chilli /Mulak chutney:

crush 10 chopped shallots,3 green chilli,tamarind,curry leaves and salt.Top it with coconut oil.

Cheera Thoran (Green Spinach stir fry)


Ingredients:

1 bunch Cheera /Spinach

Grinding:
1/2 cup Coconut
2 Garlic pods
2 Shallot/ small onion
1/4 tsp turmeric powder
1/4 tsp Cumin /jeera

Seasoning:
1/4 tsp mustard
2 Red chilli
Curry leaves
1 tsp Oil
Salt

How to prepare:

Wash and chop the spinach finely.
Crush coconut,garlic,shallot,turmeric and jeera seeds.
Heat oil splutter mustard seeds.Add red chillies and curry leaves.Add chopped spinach and crushed coconut mixture.Mix well and keep closed.Cook it on low heat for 5 minutes.Serve hot with rice.

Bread Rolls

Ingredients:

5 Bread slices

Filling:

1 big potato
1 onion chopped
1 Green chilli chopped
1/4 tsp turmeric powder
2 Tsp Coriander leaved chopped
Salt.

1 tsp Maida
1-2 tsp water

How to prepare:

Boil potato.When it is cooled mash it well.
Mix maida and water to a fine paste.
For preparing filling mix potato,onion,green chilli,turmeric powder,coriander leaves and salt well.
Keep little water on a plate.Remove the bread crust.Soak each bread slices in water and squeeze it by pressing gently between palms.Place little filling on the center and roll it out.Seal the edges using maida paste.Fry it in oil till golden brown.
Serve with Tomato / chilli sauce.

Idiappam




Ingredients:

1 cup Rice powder
2 Tsp Coconut grated
Salt
Water

How to prepare:

Boil water.Mix rice powder and salt well.Pour boiled water little by little to the flour and mix well using a big spoon.Allow it to cool for a while.Knead well.Take small portion from the dough and put it in to the idiappam maker.Grease Idly steamer with little oil.Put little grated coconut on each mould and press the dough from idiappam maker.Steam it well.
